Venturing through San Miguel de Allende in Mexico's Guanajuato, it's easy to feel like you've time-traveled. The quaint, pastel-colored buildings, cobblestone alleyways, and colonial-era architecture earned it UNESCO World Heritage status in 2008. But this city's glorious past isn't the sole reason for its charm. San Miguel de Allende is also making a name for itself as a burgeoning gastronomy hotspot, with Rosewood San Miguel de Allende spearheading the movement with its newest eatery, Pirules Garden Kitchen.

Going beyond the walls of typical restaurants, Pirules aims to educate and raise awareness about the community's producers and the environmental impact they have, all while providing a top-notch culinary experience. Chef Odin Rocha, in an interview with Forbes, discussed the restaurant's ambition to become the first plastic-free dining establishment in Latin America. Rocha also emphasized their commitment to preserving ancient culinary traditions and practices, as exemplified by their unique smoking and wood-cooking methods.

"Nature tells you what to eat, you just have to listen," Rocha stated.

Each dish at the restaurant showcases Mexico's bountiful produce, employing techniques that have been passed down through generations. The monthly-changing menu only utilizes locally-sourced ingredients, supporting suppliers such as La Factoria, a dairy farm utilizing casein-free production methods, and Via Organica, a sustainable, organic ranch nearby.

While other restaurants use organic products, none are endeavoring to close the sustainability loop as Pirules is doing under Rocha's leadership. "To truly work with sustainability, you must know the origin of the products," Rocha explained. "Every restaurant has its own mission and philosophy, and it's beautiful. Our mission is to be the strongest that we can be as a culinary scene and movement. Nature tells you what to eat, you just have to listen."

Ninety-five percent of the products at the restaurant are made in-house, including their own oils and ferments. All the produce is sourced within a 15-mile radius, with herbs grown onsite used for drinks to minimize waste. The restaurant's design, thought up by Cuaik Arquitectos Studio, provides a verdant haven amidst the city chaos, with herb and vegetable planters doubling as aesthetic elements while being harvested for dishes. The establishment offers both indoor and outdoor seating, along with a vast bar providing stunning views of the city's iconic Parroquia.

In Rocha's words, "With the opening of Pirules Garden Kitchen, we knew it was crucial that the project paid homage to the global sustainability movement, something that should concern us all. Chefs can't change the world, but we can change all the cuisines in the world, and it's always a good time to lend support wherever we can."
